A gastronomia é uma das bandeiras de Portugal no cenário internacional. Mas como se pensa a gastronomia sustentável? Para descobrir, fomos até ao Alentejo, na região do Alqueva, onde visitámos o restaurante Raya. O menu é sazonal e inspirado nos ingredientes frescos fornecidos pela quinta local Terramay. Em busca de mais aromas e sabores, fomos conhecer o Loki, em Portimão. Um restaurante com um conceito único e intimista, que acomoda apenas seis pessoas e onde o Chef João Marreiros cria diariamente um menu exclusivo, criado a partir dos produtos disponibilizados todas as manhãs pelos fornecedores locais.

Gastronomy is one of Portugal's flagships on the international stage. But how do we think about sustainable gastronomy? To find out, we went to the Alentejo, in the Alqueva region, where we visited the Raya restaurant. The menu is seasonal and inspired by the fresh ingredients supplied by the local Terramay farm. In search of more aromas and flavors, we went to Loki, in Portimão. A restaurant with a unique and intimate concept, which seats just six people and where Chef João Marreiros creates an exclusive menu every day, based on the products made available every morning by local suppliers.
