A step by step guide to preparing an authentic Dhansak )albeit with prawns rather than the traditional mutton or goat)

Ingredients:
220g yellow split peas
95g dried chickpeas
115g moong dhal (split dried mung beans)
100g red lentils
Meat
1 tbsp salt
1 aubergine chopped
1 slice of pumpkin peeled and chopped
1 large potato peeled and chopped
2 onions chopped
4 onions thinly sliced
2 ripe tomatoes (using passata)
50g spinach leaves
1-3 tbsp ghee

Blended Masala
6 dry red chillies
6 fresh green chillies
1 tbsp fresh grated ginger
10 garlic cloves peeled
10g mint leaves
10g coriander leaves


Dry Ground Masala
1 tbsp ground coriander
2 tsp ground cumin
2 tsp ground turmeric
½ tsp ground cinnamon
½ tsp ground cardamom
½ tsp ground black pepper
½ tsp black mustard seeds (bruised)
¼ ground fenugreek
¼ teaspoon ground cloves
