GroFit Meals Healthy Lentil Soup Recipe

This is a great soup. Lentils are an excellent source of B vitamins, iron, magnesium, potassium and zinc. They’re also a great source of plant-based protein and fiber. Not to mention that our family really enjoys this soup as a meal!

RECIPE:
1 pkg dry brown lentils, cooked (or canned cooked lentils)
1 onion, 1 lg carrot, 2-3 stalks celery - diced
chorizo, pancetta, or bacon, 80g/3oz - optional
beef broth, 2 qts / 2 L
potatoes, 2-3 new potatoes - grated to thicken or cubed for added texture
salt & pepper, to taste
spinach or similar greens, 4-6 c.

To prepare:
Rinse & cook lentils, set aside.
Saute choice of meat, if using, set aside
Saute onion, carrot, and celery til soft and golden.
To veggies, add in lentils, meat, potatoes & broth - Bring to a boil & simmer 20 min.
*Near end of cooking time toss in greens to soften, then serve!
