聖誕新年後吃剩好多麵包唔使驚,一次過做個麵包布甸就得啦!
在大學時期因為讀酒店的關係,在各大酒店食很多很好味的,所以現在的我都對麵包布甸很有要求。不喜歡太實太乾的,要軟滑至 creme brulee 又要外脆內軟才好吃。
好多食譜下了太多蛋白,也不夠狠心下 Double cream,最後變了過實過老了。今次讓我做一個酒店級的版本出來,讓大家在家都能享受????5星酒店級的麵包布甸。

5星級麵包布甸

材料:
聖誕麵包 1/2個 或方麵包 10片或牛角包 4個
白蘭地奶醬 隨意

蛋奶漿:
全蛋 1隻
蛋黃 5個
厚忌廉 500毫升
全脂奶 200毫升
雲呢拿籽 2茶匙
糖/煮食用甜菊菜糖/煮食用羅漢果糖 3-4湯匙
鹽少許

灑面:
牛油少許
糖 少許

I tried lots of good bread pudding in hotels during the time when I was in University studying Hotel and Catering Management. Since then, I am very demanding of having a real GOOD bread pudding.
I don't really appreciate those dried one with too much egg white in it ( which makes the texture quite hard) . I am pursuing the very smooth texture like creme brûlée but with a crispy surface.
A lot of recipes teaches people adding too much egg whites. the amount of double cream is not enough too. This makes the bread pudding so dull and hard.
Let me make the premium one like the 5 stars hotel version, so that we can enjoy the Best Bread Pudding at home.

5Stars creme brûlée bread pudding
Ingredients:
1/2 panettone or 10 slices bread loaf or 4 croissant
Some Brandy sauce (optional)

Custard:
1 egg
5 egg yolks
500ml double cream
200ml full cream milk
2 tsp vanilla bean paste
3-4 Sugar/stevia leaf sugar(for cooking)/monkfruit sugar(for cooking)
A pitch of salt

Topping(for sprinkling)
some sugar
some butter
